Description
The Neapolitan Pelatello, also known as the Caserta Black Pig, is a purebred native breed of pigs from Campania. The unique and unmistakable flavor of this prized meat comes from its diet, which consists exclusively of roots, berries, and acorns, and from its grazing habits. Only when necessary, its diet can be supplemented with rye, grains, malt, and corn. The pig's freedom to graze freely in the woods allows it to develop abundant intramuscular fat, resulting in a marbled and particularly aromatic meat, placing it among the highest quality in the world. As per tradition, the processing is entirely artisanal and limited.
The hallmark of authentic Neapolitan Pelatello is its fat, which melts in the mouth, leaving a rounded sensation on the palate, releasing an intense and all-encompassing flavour.
