Harvest
Harvested in crates, the harvest period is carefully evaluated to identify the optimal ripening of the grapes, which in our area always occurs in the second ten days of September.
Vinification and refinement
After destemming, the crushed grapes are cooled to 18°C (64°F) to initiate very slow fermentation, which will last approximately 20 days. Once fermentation is complete, the must is drawn off, separating the free-run juice from the pomace, which is then gently pressed.
The wine is aged for 10-12 months in steel barrels, bottled and released for sale after 4 months.
