Rosa canina L. produces red berries (rose hips) that are harvested in late autumn/early winter. They have numerous medicinal properties, and the jam we produce has a distinctive red color. They pair well with Fossa cheese, Asiago cheese, Pecorino di Pienza and Pecorino Sardo, Caciotta di Urbino, pancetta, zampone (stuffed pig's trotters), cotechino (a type of sausage), and Florentine rib steak. The rose hips are harvested in the mountains of Alvito.
