Winemaking
Destemming followed by 21 days of maceration at 25°C; after racking, malolactic fermentation takes place in steel and wood; aged for 14 months in barriques.
Organoleptic notes
Sweet oriental spices and a subtle hint of toasted cocoa accompany the wine throughout the tasting, sometimes opening up to a distinct, sunny black fruit, sometimes to more wintry notes of leather and humus. An enveloping touch reminiscent of velvety texture, with a finish of mint and black pepper.
Pairing
Marinated and grilled lamb chops, or even an Orthodox parmigiana with smoked provola.
