Harvest
Harvested in crates, the harvest period is carefully evaluated to identify the optimal ripening of the grapes, which in our area always occurs in the second ten days of September.
Vinification and refinement
After destemming, the crushed grapes are cooled to 18°C (64°F) to initiate very slow fermentation, which will last approximately 25 days. Once fermentation is complete, the must is racked, and the resulting free-run juice is transferred directly into barriques, where it will begin its maturation process.
The wine is aged for 24 months in new French oak barriques, bottled and released for sale after 8 months.
