Harvest
Harvested in crates, the harvest period is carefully evaluated to identify the optimal ripening of the grapes, which in our area always occurs in the last ten days of August.
Vinification and refinement
After the grapes arrive at the winery, they are gently pressed to obtain a high-quality free-run must. This must then undergoes a low-temperature fermentation, carefully controlled to preserve all its distinctive characteristics. Once fermentation is complete, the wine is transferred to steel barrels, where it begins its aging period.
During the aging process, the wine patiently rests in steel barrels for approximately six months, allowing its aromas and flavors to harmonize. It is then delicately bottled. After a month of bottle aging, the bottles are ready for release, offering a truly delightful tasting experience.
